Hi, I’m Sampoorna, and this is a blog about plant-based recipes for backcountry camping adventures.
I love the outdoors, exploring the wilderness, and being out on the trails. Living in beautiful British Columbia, outdoor adventures and places of natural beauty are practically in our backyard. I also love food and everything that comes with it: the variety of ingredients and flavours, their cultural backgrounds, and its ability to bring us all together.
A few years ago, I transitioned to a plant-based diet after seeing the data on how our food choices impact the environment. But whether in your kitchen or on the trail, vegan food can – and should – still be delicious and fun!
When you’re plant-based, eating in the backcountry can seem a little daunting: packaged freeze-dried meals are convenient, but only a handful of them are both tasty and plant-based. On the other hand, DIY recipes online typically call for a dehydrator, which most of us do not own.
Beyond Trail Mix is about making the outdoors a little more accessible and enjoyable for vegans and veggie-curious alike: combining grocery-store staples with some cooking creativity to produce backcountry-friendly versions of delicious, nutritious dishes that are good for the planet and for you!
